Who loves tuna sandwich fillings?

7 Jan

Tuna sandwich fillingSome people I know don’t like tuna too much but for me it’s always a winner. The canned tuna is always there in my pantry ready to save me when there is nothing left to eat in the house. You can always add your own twist to a tuna mix according to what you have on hand but I tried the one on the photo and it is one of my best. The olives bring the saltness and the lemon is just refreshing. I did it without the capers since I didn’t have any and it was perfect like that.

Get some change with this layered salad!

6 Jan

layered saladWhen I saw this salad I just though what a beautiful lunch it would make! It is fun and different. Nothing stops you to make it in individual containers. Another ideas is to put it in beautiful glasses and serve as an appetizer for your next dinner party. I just love the look of it with the colorful layers but it also has to be tasty so it doesn’t disappoint anyone!

Leftover Turkey Quesadilla with Cranberries

6 Jan

quesadillasHere is something to do with left over turkey or chicken. I love a crispy Quesadilla and I always put mine in my Panini press. My kid is always happy to have this for lunch. I guess it looks special to her when it is cut in triangles and she can just help herself to one.  What is good about it too is the little time it takes to make. You can can basically empty your fridge between two tortillas but the one on the photo definitely doesn’t look like left overs, it,s too cute!

Easy sandwich for lunch!

2 Jan

Chicken sandwichHere is another easy lunch idea. For a family friendly Sunday lunch just get everything ready on the table and let everyone make their own sandwich fillings with what they like best. This gave me another idea : why not make 2 each and keep one for lunch the day after. I don’t think you will get any complaints about the lunch box  after school if your children made it.
